Perfectly Roasted Vegetables
It took me a while, but I’ve finally perfected my roast veggy game! Nothing is better than when Sweet Potatoes and Carrots come out of the oven slightly charred from all those sugars caramelizing – ugh…. drool. It’s easy, relatively quick – so let’s dive in!
- 3 cups of your choice of vegetables, chopped the way you like! *Note that the smaller the pieces, the shorter the cooking time.
- 1-2 Tbsp Grapeseed Oil
Heat oven to 400 F. In a bowl, toss your vegetables with Grapeseed Oil and transfer to a baking tray. Add to oven an let cook for around 40 minutes (depending on the size of chop you used, it could take less or more time. I like to check my veggies every 20 minutes just to see how they’re doing. Poke with a fork – if the veggies are soft – they’re done!) Now you could add salt or any other seasonings that you desire! Perfectly roasted veggies for every occasion!
